Four stay secret until you're seated. The chef reserves the right to improvise; the rice does not.

The counter

Hinoki, hands, and not much talking.

Chef Daisuke Mori spent eleven years in Tsukiji before the quiet pulled him west. The counter is a single slab of hinoki cypress; the playlist is the rice cooker. Phones are permitted, reluctantly.
